Scientific Binomial Name: Opuntia spp
Sliced or chopped for salads or cooked like green beans.
Also called Edible Cactus and nopales, cactus leaves will have even and somewhat thick leaves.
Cactus leaves should also be solid with no soft, cracked, wrinkles or bruised spots.
Coloring of good quality cactus leaves will be an even medium to dark green.
Avoid cactus that has thin, wilted leaves which are a sign of old product.
Soft, discolored spots on the leaves or cacti that are limp or dry should also be avoided.
Edible cactus in good condition can be refrigerated for more than a week if wrapped tightly in plastic.
In general, vegetables will not ripen further after harvest.
Cactus Leaves are a good source of vitamins A and C.
